Day 20 - Pancake Day

Pancake Day is great - I don't have to think about what to cook, they're easy to make and go down well with my toddler. And every year I make pancakes and wonder why this is the only day of the year when we eat them, why does it never occur to me to make them more often? And once again, I make a mental note to make them again after Lent is over and no doubt by the time Easter arrives I will have forgotten all about it and that'll be it on the pancake-making front for another year.
